An entremet gâteau, often considered among the finest specialised gateaux, typically consists of multiple refined layers — a base layer such as sponge cake, biscuit joconde, or dacquoise; a crispy layer like praline feuilletine, crumble, or chocolate crunch; one or more mousse layers featuring flavors such as fruit, chocolate, or coffee; and an insert of gelée, compote, or crémeux at its center — all finished with a glaze or coating such as mirror glaze, velvet spray, or chocolate glaze, and adorned with decorations like delicate chocolate work, fruit, or edible gold. This intricate dessert can also be enjoyed alongside Italian speciality products or served as part of an elegant assortment that includes petits fours and viennoiserie.
